Instructions

Step 1: Preheat the oven to 400°F (200¼l). Peel the potatoes and slice them into 1/8-inch thick rounds. Soak the potato slices in cold water for 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Step 2: Heat the oil in the heavy-bottomed cast iron skillet over medium-high heat until shimmering. Add the potato slices and cook until they are golden brown on both sides, about 4-5 minutes per side. Remove the potatoes from the skillet and set aside.

Step 3: Reduce the heat to medium and add the butter to the skillet. Once melted, add the garlic and cook until fragrant but not browned, about 1 minute. Add the diced onions and cook until they are translucent, about 3-4 minutes.

Step 4: Make a well in the center of the skillet and crack in the eggs. Cook until the eggs are almost set, about 2-3 minutes. Use the tongs to gently lift and fold the edges of the eggs towards the center, allowing the uncooked egg to flow to the edges. Cook until the eggs are fully set, about 1-2 minutes more.

Step 5: To assemble the tartine, place a cooked potato slice on a plate or board. Top with a spoonful of the egg mixture and garnish with chopped fresh herbs, such as chives or parsley. Drizzle with olive oil and serve immediately.

Chef Tips: For a crispy potato skin, try baking the potato slices in the oven for 10-15 minutes before cooking them in the skillet. To add an extra layer of flavor, sprinkle a pinch of flaky sea salt over the eggs before serving. Fresh herbs add a bright, freshness to the dish, so don't be afraid to experiment with different combinations.
