Instructions

Step 1: Preheat your oven to 400°F (200¼lC). In a large prep bowl, whisk together mayonnaise, eggs, salt, and pepper until well combined.

Step 2: In a separate large prep bowl, combine chicken, dill, and a pinch of salt and pepper. Mix until the chicken is evenly coated with the herb mixture.

Step 3: Heat 1 tablespoon of butter in a heavy-bottomed cast iron skillet over medium-high heat until shimmering. Add the chicken mixture and cook until browned on all sides and cooked through, about 10-12 minutes. Remove the chicken from the skillet and set aside.

Step 4: Reduce heat to medium and add the remaining 1 tablespoon of butter to the skillet. Once melted, add the mayonnaise mixture and bring to a simmer. Scrape the bottom of the skillet to build a deep fond. Reduce the sauce by half, stirring occasionally, until it coats the back of a spoon, about 5-7 minutes. Stir in the cooked chicken and cook until heated through.

Step 5: Serve the fricassee hot, garnished with additional fresh dill and a drizzle of olive oil, if desired. Rest for 2-3 minutes before serving to allow the sauce to thicken slightly and the flavors to meld together.
