Instructions
Step 1:
Preheat a heavy-bottomed cast iron skillet over medium heat until shimmering. Spray the skillet with canola oil spray to prevent sticking.
Step 2:
In a prep bowl, whisk together 4 large eggs, 1/2 cup grated Gruyère cheese, and 1/4 cup heavy cream until well combined. Season with salt and pepper to taste.
Step 3:
Using a razor-sharp chef's knife, cut 2 tablespoons of unsalted butter into small pieces and add to the skillet. Once the butter has melted, tilt the skillet to ensure the butter covers the entire surface.
Step 4:
Pour the egg mixture into the skillet and let it cook for 2-3 minutes, until the edges start to set. Use tongs to gently lift and fold the edges of the omelette towards the center, allowing the uncooked egg to flow to the edges. Repeat this process 2-3 times, until the omelette is almost set.
Step 5:
Using a wooden spoon, gently fold the omelette in half over the filling. Cook for an additional 1-2 minutes, until the cheese is melted and the omelette is cooked through. Remove from heat and let rest for 1 minute before serving.
Step 6:
Garnish with fresh herbs, such as chives or parsley, and serve on a textured ceramic plate. Drizzle with a small amount of olive oil and squeeze a sliver of lemon juice for added brightness and depth.
Chef tip: To build a deep fond, make sure to not stir the butter too much, allowing it to develop a nutty aroma and a golden-brown color. Also, don't overfill the omelette, as this can make it difficult to fold and can result in a messy presentation.
